Vegetarian Jaipuri is a easy dish with plenty of vegetables. There are so many methods one can practice this recipe but my favourite is from chef Sanjeev kapoor. I even have followed this veg jaipuri recipe from sanjeev kapoor’s web page with a small twist of my own. Instead of including khoya I simply additional recent cream. Also like many unique mix vegetable sabzi recipes I even have additional small volume of paneer on this curry. Paneer in a small volume simply lift up this sabzi.
The gravy is made utilizing real rajasthani / jaipuri sort spice paste. First we could make spice paste after which use the similar in gravy. The recipe is quick. And with a bit of pre-preparation you'll be able to make this in no time.
VEGETABLE JAIPURI RECIPE OR VEG JAIPURI SABZI
INGREDIENTS:
Ghee 2 tbsp
Coriander seeds 2 tsp
Ceshew nuts 6 pieces
Green chilies 1 tsp
Onion 1/2 cup chopped
Tomato 1/2 cup chopped
Onion tomato puree 1/2 cup
Ginger garlic paste 1 tbsp
Garam masala 1 tsp
Capsicum 1/4 cup chopped
Carrot 1/3 cup chopped
Green beans 1/3 cup chopped
Green peas 1/3 cup
Paneer 100 grams
Salt 2 tsp or to taste
Fresh cream 1 tbsp
Water 3/4 cup
INSTRUCTIONS:
Pre-Preparation
Wash all of the vegetables (green beans, carrot, capsicum, inexperienced peas) and cut into medium measurement pieces.
Heat water in a deep backside pan and par-boiled all vegetables besides Capsicum in boiling water for 2 minutes.
Drain the water and rinse accurately in chilly water to cease veggies from over cooking.

To Make Jaipuri Spicy Paste

Take the coriander seeds ,cashew nuts and inexperienced chilies in a mixer grinder jar and make a mushy paste.
To Make Vegetable Jaipuri Sabzi
In a non-stick pan warmth 1 tbsp of ghee / clarified butter and saute chopped onions, ginger and garlic paste.
Saute till onions turns golden. Now upload chopped tomatoes and practice dinner till they're soft.
Add garam masala powder and mix with unique ingredients.
Let the tomato onion gravy will get cooked for 2 minutes. Add a bit of water if required.
Throw within the boiled vegetables alongside with chopped capsicum.
Also upload the Jaipuri spicy masala we made earlier.
Now upload the tomato puree and mix nicely with all ingredients.
Let the gravy will get cooked for 2 to a few minutes on low flame. Add water if require.
Now upload paneer cubes / Indian cottage cheese. Combine paneer with veg jaipuri gravy and allow it practice dinner for 2 minutes.
Add a spoon of recent cream and mix well.
Delicious Vegetable Jaipuri or Veg Jaipuri is able to serve. Serve this sabzi hot with paratha, roti or kulcha.
